My World Famous 7 Up Pound Cake Recipe

My Grandmother was the first one that I knew of that made this oh so wonderful pound cake. 7 Up was a very popular drink in the Charlotte area where I grew up as a kid. I remember those first 7 Up Pound Cakes that I ever got to taste.

My Grandmother Hattie made those first 7 Up Pound Cakes in round tube cake pans. I remember that we sold slices of plastic wrapped 7 Up Pound Cake for 50 cents a slice and people were happy to get it. If they came in and there was no 7 Up Pound Cake they were some disappointed shoppers.

My Grandmother made homemade cakes and pies all day every Friday and Saturday and by late Tuesday or Wednesday all of the cake and pies in the store were gone.

Seven Up Pound Cake Recipe

This is my secret recipe for 7 Up Pound Cake that I've been working on for about forty years.

7 Up Pound Cake Ingredients

1. Three Cups All Purpose Flour.

2. One Cup Butter Softened To Room Temperature.

3. Five Large Eggs At Room Temperature.

4. One Teaspoon Ground Sea Salt.

5. One Teaspoon Almond Extract.

6. One Teaspoon Vanilla Extract.

7. One Half Cup Crisco Shortening.

8. One Cup 7 Up Soft Drink.

For Your Glaze You Will Need

1. One Fourth Cup 7 Up Soft Drink.

2. One Half Cup White Granulated Sugar.

Pre-heat your oven to 300 degrees and grease and flour a 10 inch tube cake pan.

You'll want to combine your shortening, butter, sugar, vanilla and almond extract in a large mixing bowl with an electric hand mixer. You'll want to beat the mixture until it's light and fluffy. At this point you'll want to beat your large eggs in one at a time. Be sure to beat all your eggs in well so that every thing gets very well mixed together.

You want to combine your flour and salt in a separate bowl and then add to your wet ingredients. Now you'll want to beat in one cup of the 7 Up. Be sure that all your ingredients get very well mixed together.

You'll want to spray the inside of a 10 inch tube cake pan with vegetable cooking spray and then put a tablespoon of flour in the pan and shake it around very well to coat the inside of the tube cake pan. Turn the pan upside down over a trash can or sink and tap out the extra flour.

Pour your mixed up 7 Up Pound Cake batter into the prepared tube cake pan allowing enough room for the cake to bake and expand. You'll want to bake for one hour and thirty minutes until a cake tester inserted into the cake in the center comes out clean.

Cool in the pan for 10 minutes and then invert on a tray or plate and take the baked 7 Up Pound Cake out of the pan. Let the cake cool while you make the frosting.

While the cake is cooling make the frosting by combining one fourth cup of 7 Up with one half cup of sugar in a sauce pan. Bring to a boil and boil 1 - 2 minutes until the sugar is completely dissolved. Take a fork and stick holes gently down into your cake. Pour and spread the frosting over the cakes top and sides and allow it to cool. You'll end up with a oh so delicious pound cake that will have your family and friends begging for more and more.

You can if you wish serve this cake topped with strawberries, raspberries, or blueberries. Or your favorite berry or even peaches. I promise you this cake will be delicious with any fruit or berry. Give it a try and see what you think.
